During peak season, just about every resort is packed. For example, lodging in Park City is about non-existent between Christmas and New Years. The Sundance Film Festival also brings a lot of crowds during mid-January in Park City. If you are planning on skiing in Salt Lake Valley, there are great accommodations in the city. That way you can ski at a different resort every day if you want. There are many great restaurants, clubs, and bars to choose from in Salt Lake City.

Most Utah ski resorts are opened by Thanksgiving and remain open through the end of the season, which is in April (and sometimes later). If you are trying out Utah skiing, you can find discounts during the early and late parts of the season.
